Grilled Pork Sisig Recipe - Sisig is a Kapampangan term which means "to snack on something sour". It usually refers to fruits, often unripe or half-ripe, sometimes dipped in salt and vinegar. It also refers to a method of preparing fish and meat, especially pork, which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices.Sisig also refers to Sizzling sisig, a Filipino dish made from parts of pig’s head and liver, usually seasoned with calamansi and chili peppers.

There are hundreds of ways to make sisig, and Grilled Liempo Sisig is just one of the ways. This delicious sisig version (which is very tasty, by the way) makes use of grilled pork belly. I am referring to the Filipino style inihaw na liempo which is an awesome dish by itself. Can you imagine a dish better than that? This Grilled Liempo sisig might be the leveled-up version – something like grilled liempo in super saiyan mode. I’m sure that you get what I am saying.

Grilled Pork Sisig Recipe INGREDIENTS:

  • grilled pork (leftover)
  • 2 1/2 tbsp mayonnaise
  • 3 tbsp fish sauce (patis)
  • 2 siling labuyo, chopped
  • 1/2 medium onion, chopped
  • 1 lemon
  • 1 egg
INSTRUCTIONS:
  1. Chop grilled pork into small pieces.
  2. Add mayonnaise, fish sauce and lemon. Mix well.
  3. Warm grilled pork mixture in the microwave for 1-2 minutes.
  4. Fry egg, sunny side up style.
  5. Top grilled pork with onion, siling labuyo and egg.
  6. Serve hot (in a sizzling plate if available).

Origin
The dish is said to have originated from local residents who bought unused pig heads from the commissaries of Clark Air Base in Angeles City, Pampanga. Pig heads were purchased cheap since they were not used in preparing meals for the U.S. Air Force personnel stationed there. An alternate explanation of its origin is that it is but a variation on an older recipe, which is pork ears and jowl, boiled, chopped then marinated in a spicy broth-soy-vinegar sauce.
