Delicious Filipino Bread Pudding - Bread pudding is a bread-based dessert popular in many countries' cuisines, including and not limited to Argentina, Colombia, Belgium, Canada, Cuba, France, Germany, Ireland, Malta, Mexico, the Netherlands, Slovakia, the Philippines, Puerto Rico, India Double ka Meetha and the United Kingdom, as well as the United States. In other languages, its name is a translation of "bread pudding" or even just "pudding", for example "pudín" or "budín" in Spanish; also in Spanish another name is "migas" crumbs.In the Philippines, banana bread pudding is popular. In Mexico, there is a similar dish eaten during Lent called capirotada.

Delicious Filipino Bread Pudding Ingredients:

  • 4 cups milk
  • 2 cups day old bread, diced (about 6 bread slices)
  • 2 eggs, slightly beaten
  • 1/3 cup sugar
  • 1/2 tsp. salt
  • 2 tsp. vanilla extract
  • 4 tbsp. melted butter (or margarine)
  • 1 cup macapuno (or 1 cup drained langka jackfruit preserves)

Cooking Procedures:

  1. Preheat oven to 350°F. Grease a 1-1/2 quart casserole. In a saucepan, heat milk over low heat until tiny bubbles appear around the edges. Remove from heat, add diced bread.
  2. For custard-like pudding, let bread soak for about 30 minutes, mash pieces against the side of bowl with a spoon until mixture is smooth.
  3. Blend in eggs, sugar, saltvanilla and butter. Add macapunoor langka.
  4. Pour into greased casserole or caramel-lined pan, place in a largerbaking panwith warm water about 1″ up the side of the casserole.
  5. Steam-bake for 1 hour and 15 minutes or until tester knife inserted in the middle comes out clean.
  6. Serves 6 to 8.

Regional variations
In Belgium, particularly Brussels, it is baked with brown sugar, cinnamon, old bread, and raisins or apple.
In Canada, bread pudding is sometimes made with maple syrup.
In Hong Kong, bread pudding is usually served with vanilla cream dressing.
In Hungary it is called 'Máglyarakás' which is baked with whipped egg whites on top of it.
In Malaysia, bread pudding is eaten with custard sauce.
In Mecklenburg-Vorpommern, Germany, black bread is used to make "black bread pudding" (Schwarzbrotpudding)
In Puerto Rico, bread pudding is soaked over night in coconut milk and served with a guava rum sauce.
In the United States, especially Louisiana, bread puddings are typically sweet and served as dessert with a sweet sauce of some sort, such as whiskey sauce, rum sauce, or caramel sauce, but typically sprinkled with sugar and eaten warm in squares or slices.
