Cheesy Chicken Pastel Recipe - Pastel de Pollo or Chicken Pastel is a Spanish Origin. It is also known as Chicken Pot Pie. Yes, this is a pie. However this is a savory pie. The dish is composed of meat and vegetables in a thick white sauce. It is like a stew encased in a pie crust or puff pastry.

Chicken Pastel is a yummy dish that is usually served with pie crust on top. Not to be mistaken with the Brazilian Pastel, the crust of this Chicken Pastel Recipe is very similar to that of buko pie and empanada.When it comes to its overall flavor, Chicken Pastel can be compared to chicken pot pie or turkey pot pie. The only distinguising factor is the chorizo which also gives this dish a wonderful unique flavor.
You can always try to play around adding some ingredients to tailor to your preference. for example, I usually add chopped boiled eggs when I make this for myself. You can also add other ingredients that can enhance the flavor and texture of your own chicken Pastel.

Cook Cheesy Chicken Pastel Recipe Ingredients:

  • 1/2 kg chicken breast, cubed or diced
  • 1 tablespoons garlic
  • 1 1/2cup mix vegetables
  • 2 cups potatoes, diced
  • 1 big can vienna sausage, sliced
  • 1 can button mushrooms
  • 250 ml fresh milk
  • 1 /2 cup butter
  • 1/2 cup all purpose flour
  • 1 pc green bellpepper
  • 2 cups chicken stock
  • 1 cup cheese spread
  • 1/2 teaspoon curry powder
  • 1 pc egg, beaten
  • 4-6 pcs slices of bread
  • 2 pcs egg yolk
  • 200 grams cheese grated
  • 3 cups cooked rice
  • Salt and pepper to taste

Cooking Instructions:

  1. In a pan, melt butter.
  2. Sauté garlic, bellpepper and add flour.
  3. Add milk and chicken stock.
  4. Add chicken and potatoes and let it simmer until cook,
    add cheese spread and curry powder.
  5. Season with salt and pepper.
  6. When the chicken is cooked, add mix vegetables, mushrooms
    and vienna sausage. Let it simmer.
  7. In an oven safe dish, spread the rice.
  8. Top cooked chicken mixture over rice.
  9. Top with bread, brush with egg wash and sprinkle with grated cheese.
  10. Bake in the oven for five to ten minutes or until the cheese melt and turn golden brown.

Additional Information About Pastel

Pastel - can also be done with different types of meat. Pigeon, rabbit, duck, ox tongue and even kidneys can be used as a substitute to the chicken. This dish has a rich flavor that can be eaten as it is but Filipinos, prefer to eat with rice. The original Pastel recipe is quite lavish and to suit the Filipino lifestyle, different people came up with their own versions.
