This recipe is amazing! I love calamari (deep fried squid) – one of the most popular tapas all over Spain and synonymous with Spanish cooking – but I think calamari deserve better. This is one great example. The most important thing here is to caramelize the onions well, so take your time.

Step 1
Use a small, sharp knife to cut calamari hoods from the tentacles. Remove and discard the clear, hard quill from inside the hood. Peel away flaps and remove the grey skin. Rinse under cold running water. Cut hoods lengthways from the opening to tip. Lay hoods flat, inside up, on a clean work surface and score diagonally in a diamond pattern. Cut into 10cm pieces. Place in a bowl. Add salt and sugar. Toss to combine. Set aside for 10 minutes to develop flavours.

Meanwhile, for the piri piri, place the chilli in a small jar or bottle. Add oil and vinegar. Season. Shake well to combine.
Step 3
Preheat a barbecue flatplate or grill on medium-high. Cook the calamari, turning, for 2 minutes or until just cooked through. Transfer to a large plate. Spoon over piri piri and sprinkle with parsley.
Step 4
Serve the caramelised calamari immediately with aioli, lemon wedges and the remaining piri piri.
